Il boom della cucina italiana in Giappone non conosce limiti. Negli ultimi anni i ristoranti italiani sono cresciuti così tanto in termini quantitativi e qualitativi che è oramai possibile gustare i piatti delle venti regioni italiane senza aver bisogno di recarsi nel Bel Paese.
Trent’anni fa, quando l’amore per la cucina italiana esplose, gli ingredienti a disposizione dei ristoratori erano estremamente limitati. Ciò non rappresentava comunque un ostacolo per chi, come Carmine Cozzolino, era determinato ad aver successo come chef: “Quando sono arrivato in Giappone oltre 30 anni fa gli ingredienti a disposizione erano pochi e ho dovuto inventare nuove soluzioni per ricreare le ricette della mia infanzia. È incredibile come il risultato sia stato, a volte, anche migliore dell'originale."
Carmine, oggi imprenditore e chef di successo di tre ristoranti in Giappone racconta la sua esperienza agli ospiti di ICCJ in un seminario che comprenderà anche una parte di degustazione.

Nasce nel 1955 in Calabria. A 15 anni si reca a Firenze dove inizia a lavorare nel mondo della ristorazione. Nel 1978 si trasferisce in Giappone per studiare Aikidō. Nel 1982 lavora come chef presso il ristorante “Primo Piatto” ad Aoyama. Dopo varie esperienze, nel 1988 apre il suo “Carmine” ad Ichigaya. Attualmente, oltre alle numerose collaborazioni con riviste e programmi televisivi, gestisce diversi ristoranti a Tokyo e anche una struttura specializzata nei seminari di cucina in Italia.
Italian tradition x Japanese ingredients - Carmine's experience
The boom of Italian cuisine in Japan knows no limits. In the last few years, Italian restaurants have grown so much in quantitative and qualitative terms that it is now possible to taste dishes of the twenty Italian regions without having to travel to Bel Paese.
Thirty years ago, when the love for Italian cuisine exploded, the ingredients available to chefs were extremely limited. However, this was not an obstacle for those who, like Carmine Cozzolino, were determined to succeed as a chef: "When I arrived in Japan over 30 years ago, there were few available ingredients and I had to invent new solutions to recreate the recipes of my childhood. It's amazing how the result was, sometimes, even better than the original."
Carmine, today a successful entrepreneur and chef of several restaurants in Japan, tells his experience to ICCJ’s guests in a seminar that will also include a tasting session.

Profile: Carmine Cozzolino
Born in 1955 in Calabria, Carmine moved to Florence at 15 where he started working in the restaurant world. In 1978 he moved to Japan to study Aikidō. In 1982 he worked as a chef at the "Primo Piatto" in Aoyama. After various experiences, in 1988 he opened his "Carmine" in Ichigaya. Currently, in addition to numerous collaborations with magazines and television programs, he runs several restaurants in Tokyo and also a structure specialized in cooking seminars in Italy.

Gran Concorso di Cucina is back! The culinary contest, organized by the Italian Chamber of Commerce in Japan, has now reached its 9th edition. The 8 finalists will face each other in the final of November 22 in Tokyo in front of a jury of experts!
The winners will be chosen based on 5 main criteria:
- Presentation
- Taste
- Creativity
- Respect of the Italian culinary tradition
- Relevance to the 2018 theme "New Italian Lifestyle - A dish to taste with Peroni Nastro Azzurro".
The first prize winner will receive a round-trip ticket to Italy and a five-day course at the Italian Academy of Cooking.
Italian cuisine chefs who do not hold Italian citizenship and with a minimum of two years experience can take part in the competition.
