Inspired as a young boy by the local specialities prepared by his mother, he has spent his career seeking to preserve the culinary ecology of his home nation by supporting small producers, old-style markets and local varieties. The Chef is originally from Avigliano, in the province of Potenza.

Vito Mollica, Executive Chef and Director of F&B of Four Seasons Hotel Firenze’s Michelin starred restaurant Il Palagio.

Mollica joined the Four Seasons Hotels first in Milan in1996 before moving to Prague in 2000 and later Florence in 2007.

He is one of the most acclaimed Chefs in Italy and abroad and has been awarded many prizes among which: Arco Prize (2010), Chef of the Year by Il Sole 24 Ore (2012), Porcellino Award (2012) as well as receiving international recognition: Il Palagio Restaurant was ranked #4 on The Daily Meal’s 101 Best Restaurants in the World, and the Signature Cuisine by the Touring Club Italiano in 2015.

Mollica is being featured in many publications and is the protagonist of the book “Vito Mollica – invito a cena al Palagio di Firenze” and author of the book “Il Brunch Italiano”.
