Do you want to know more about the Italian Extra Virgin Olive Oil (EVOO) of excellence? A unique chance to learn from two of the world top experts: Pietro Paolo Arca and Antonio Giuseppe Lauro.
The EVOO workshop will be held before the 7th Award Ceremony of the Japan Olive Oil Prize (JOOP), the most professional Extra Virgin Olive Oil competition in Japan.
This workshop will help you deepen your knowledge on the history, production areas and processes of the Italian olive oil and understand how to distinguish a high-quality product from a defected one. You will also learn about the main characteristics of olive oils with particular attention to the organoleptic properties.
The products that you will taste will be selected among the Italian oils awarded at JOOP 2019.

On the occasion of the 7th edition of Japan Olive Oil Prize (JOOP), ICCJ organizes a course on professional olive oil tasting.
This course will provide all participants with the basics of sensorial analysis method. Our tutors will guide you through the process of distinguishing defected oils from good and excellent EVOO, learning some of the main characteristics of the olive oils with particular attention to the organoleptic characteristics. The olive oils used for the course will be selected among 250 EVOO that joined JOOP 2019.
The course will be taught by JOOP 2019 Panel Members who are certified by EU standards and rank among the top international experts in the field: Pietro Paolo Arca (ITA), Michiyo Yamada (JAP), Konstantinos Liris (GRE), Angeles Calvo (SPA), Pablo Voitzuk (USA) and Antonio Lauro (ITA).

The instructor

Sandro Furzi (ICCJ Marketing Manager) has been practicing martial arts for over 20 years, earning his black belt in Judo, 3-dan in Kendo and teaching licenses in traditional Japanese swordsmanship. In order to achieve mental toughness and unbreakable discipline, Sandro practices bodyweight exercise everyday first thing in the morning. One of his favorites quotes is the Latin phrase from the Roman poet Juvenal "Mens sana in corpore sano" (a healthy mind in a healthy body).

Mathilde and Matthieu started In Olio Veritas one year ago. They visit EVOO producers and experts in various countries to get a better understanding of EVOO production and markets around the world. Their goal is also to make people aware of the differences between high-quality EVOO and cheap regular oils you can get at the supermarket.
So far, they have visited France, Italy, New-Zealand, China and Japan.

Though French, Mathilde and Matthieu (both 31) met in Rome 8 years ago, where they realized they had a common interest and passion for good and healthy food as well as local and farm products. Especially, they are both fascinated by extra-virgin olive oil: its taste, colors, smell, its ancient history and its benefits for health. When not traveling, Mathilde works for the leading « from farm to market » company in France and Matthieu works in the media industry.
